The Importance and Role of Aquatic Foods Resources in Nutrition
Abdullah Öksüz, Şenay Burçin AlkanAquatic food sources encompass all food resources of plant and animal origin that live in water and are used as food by both animals and humans. Historically, these sources have been the primary food supply for maritime societies and have now become an important food source globally, with over 2,500 aquatic animal and plant species through aquaculture. Aquatic foods are rich in high-quality protein, long-chain omega-3 fatty acids, vitamins, and minerals, making them crucial for healthy nutrition. Fish, crustaceans, and molluscs provide high-quality protein and can help reduce obesity and non-communicable diseases. Global seafood consumption is increasing, and this trend is expected to continue. However, seafood consumption in Turkey is below the global average, and efforts are needed to increase it. Sustainable production of aquatic resources is essential for ensuring food security and reducing environmental impacts. Seaweeds and microalgae are also notable for their nutritional properties and bioactive compounds. Biological, chemical, and physical risks must be considered in seafood consumption, and proper storage, preparation, and cooking methods should be applied. The sustainable use of aquatic food resources is vital for meeting the nutritional needs of the growing world population and maintaining ecological balance.
Akuati̇k Kaynaklı Gıdaların Beslenmedeki̇ Yeri̇ ve Önemi̇
Abdullah Öksüz, Şenay Burçin AlkanAkuatik kaynaklı gıdalar, hayvanlar ve insanlar tarafından besin olarak kullanılan suda yaşayan bitkisel ve hayvansal kökenli tüm gıda kaynaklarını kapsar. Tarih boyunca denizcilikle uğraşan toplumların temel besin kaynağı olan bu kaynaklar, günümüzde akuakültür yoluyla dünya çapında 2.500’den fazla akuatik hayvan ve bitki türü ile önemli bir gıda kaynağı haline gelmiştir. Akuatik gıdalar, yüksek protein, uzun zincirli omega-3 yağ asitleri, vitamin ve mineraller açısından zengin olup, sağlıklı beslenme için büyük öneme sahiptir. Balıklar, kabuklular ve yumuşakçalar gibi su ürünleri yüksek kaliteli protein içererek obezite ve bulaşıcı olmayan hastalıkların azaltılmasına yardımcı olabilir. Su ürünleri tüketimi dünya genelinde artmakta ve bu eğilimin gelecekte de devam etmesi beklenmektedir. Ancak, Türkiye’de su ürünleri tüketimi dünya ortalamasının altında olup, artırılması için çalışmalar yapılması gerekmektedir. Akuatik kaynakların sürdürülebilir üretimi, gıda güvenliğini sağlama ve çevresel etkileri azaltma açısından önemlidir. Deniz yosunları ve mikroalgler de besleyici özellikleri ve biyoaktif bileşenleri ile dikkat çekmektedir. Su ürünleri tüketiminde biyolojik, kimyasal ve fiziksel riskler göz önünde bulundurulmalı ve uygun saklama, hazırlama ve pişirme yöntemleri uygulanmalıdır. Akuatik gıda kaynaklarının sürdürülebilir kullanımı, artan dünya nüfusunun beslenme ihtiyaçlarını karşılamak ve ekolojik dengeyi korumak için hayati öneme sahiptir.
